Japchae - Korean Sweet Potato Noodles

Colourful, delicious, healthy Japchae – Korean Sweet Potato Noodles

Hi there, dear friends :D 

Japchae is an appetising Korean sweet potato noodle dish and my version of the recipe is really easy to put together. Sweet potatoes noodles have a low-glycemic index and are low in carbohydrates, compared to wheat noodles.  

I often make Japchae whenever I have a party because it is such a colourful, delicious noodle that can be served cold. There is not much cooking to do, and the ingredients are very simple ==> just some assorted vegetables, sweet potato noodles, olive/sesame oil, soy sauce and honey. The ingredients are quite versatile and you can even substitute some of them to suit your taste :idea:  

Vegetarian Japchae Recipe 

Ingredients :-

* 1 packet Korean Sweet Potato Noodles

 Korean noodles

* Assorted vegetables (I used carrots, spinach, red & yellow bell peppers, Shimeiji mushrooms, zucchini, onions) 

* 1/2 cup soy sauce

* 1/4 cup honey

* Olive oil for stir frying vegetables

* 2 tbsps Sesame oil

Method :-

1) Cook the Korean noodles as per instructions on the package. Set aside in a large mixing bowl. 

2) Cut vegetables into thin strips or matchstick sizes.  They will be cooked separately.

3) Heat up a non stick pan or wok. Drizzle a little olive oil and drop in the first type of vegetable, stir frying or moving them quickly around until they are cooked. Place with the cooked noodles in the mixing bowl. Repeat with the rest of the vegetables, cooking one type of vegetable at a time. 

4) When all the vegetables have been cooked, pour in the soy sauce, honey and sesame oil. Mix thoroughly, and taste to see if more soy sauce is required. Some soy sauces can be quite salty, while some have lower sodium. 

5) Garnish with toasted sesame seeds and chopped green onions. (I forgot to add them before I took the picture above **blush**) 

For meatlovers, you can add in pork, chicken, beef or seafood – just marinate them in some soy sauce, salt and pepper. 

Being Chinese, I tried adding my favourite oyster sauce and abalone sauce to my Japchae once, but it tasted weird and not as good….and so, I decided to just stick simply with soy sauce and honey! Lol!
